Grammy’s Beignets: Biscuits, Canola Oil, Powdered Sugar
Beignets, pronounced “ben-yays”, are a deliciously sinful treat, commonly devoured in New Orleans at any and all Cafe’ du Monde and Morning Call establishments. During my last retreat to New Orleans, I mentioned beignets and possibly buying a packet to bring back for making them in Las Vegas. My grandmother told me that all I needed to make beignets was a roll of biscuits, some oil and some powdered sugar and, boy, was she right.
Not only does her method taste exactly the same (if not better) than the ones that we used to buy from Cafe’ du Monde (and Morning Call) but, it is cheaper and easier, too! You don’t have to worry about combining ingredients and making dough, all you have to do is buy a cheap roll of biscuits and some canola oil (along with some powdered/confectioner’s sugar).
Simply pour enough oil to cover bottom of frying pan, heat to low-medium and take the biscuits out of the roll. If you want round beignets, just push down in the middle of the biscuit. If you want square beignets, form the biscuits into a squares. Etc, etc, you get the point

Once the oil is heated up, place the biscuits (soon to be beignets) in the pan and gently brown both sides evenly. Take out of oil (place in between paper towels for soaking up extra oil), place on plate, spoon some powdered sugar on top and enjoy! I think it is best served with some chocolate milk but, that’s just me

The sugar makes this dish looks sinful enough
